While February gives way to March, you’ll still find carrots, winter squash, celery, potatoes, parsnips, and turnips in the markets coming from cold storage, along with onions, apples, and garlic.
When spring arrives (March in San Antonio, but not until late April or early May in Hyde Park, New York) the produce section starts to change.
What’s in season during spring? Here are some springtime favorites:
- Apricots (late spring)
- Artichokes
- Arugula, mâche, watercress, and other tender salad greens
- Asparagus
- Fava beans
- Fennel
- Fiddlehead ferns
- Fresh peas (shell peas, snow peas, and sugar snap peas)
- Leeks and ramps (early)
- Mushrooms, notably morels
- New potatoes
- Radishes
- Rhubarb
- Spinach
- Spring onions and scallions
- Strawberries
Herbs are usually easy to find year-round, but the herbs that first raise their heads in gardens are these:
- Chives
- Mint
- Parsley
Fish and seafood also have seasons. We look for these species in spring:
- Cod
- Halibut
- Shrimp
- Soft-shell crab (late spring)
