Temaki (hand roll) with salmon and rice

Makes 8 servings

Without using a bamboo mat, you can produce almost the same sort of sushi by hand rolling. But because hand-rolled sushi is not as firmly or evenly packed as the kind rolled in a mat, the hand-rolled type is eaten as is, without being cut into bite-sized rounds.

Ingredients

  • 4 sheets nori, halved
  • Sushi Rice 
  • Prepared wasabi paste, as needed
  • 12 to 16 oz fish, such as tuna, yellowtail, red snapper, salmon, shrimp, crab (or krab), or other seasonal fish
  • Cucumber, as needed
  • Avocado, as needed
  • Shiso leaf, as needed (optional)

Directions

  1. Place a “finger,” or two, of rice and filling ingredients onto a rectangle piece of nori, then roll up into a cone shape. Eat immediately, without cutting.
