Ingredients
- 2 lb English cucumbers, peeled
- 1/2 cup lime juice
- 1/4 cup sugar
- Kosher salt, to taste
- 1 Thai bird chile, thinly sliced (optional)
- 1 large red onion, finely minced
- 1/2 cup whole mint leaves
- 1/2 cup coarsely chopped cilantro
- 1/4 cup chopped roasted peanuts
Directions
- Cut the cucumbers in half lengthwise, remove all the seeds, and cut into thin slices.
- In a mixing bowl, combine the sliced cucumbers with the lime juice, sugar, salt, chiles, and onions, and marinate for 15 minutes.
- Add the mint, cilantro, and peanuts, toss, and adjust seasoning as necessary. Serve well chilled.
