Roasted Curried Cauliflower

Makes 8 servings

Ingredients

  • 1 head cauliflower (about 3 lb), cored and cut into florets
  • 1/4 cup olive oil
  • 2 tablespoons curry powder
  • 1/2 teaspoon kosher salt

Directions

  1. Preheat the oven to 350°F.
  2. In a small bowl, whisk together the oil, curry powder, and salt until a smooth paste is formed.
  3. In a large bowl, toss the cauliflower with the curry paste. Rub the paste into the florets until they are well coated.
  4. Bake until the cauliflower is golden brown and tender, about 35 minutes.
