No-Egg Nog

Makes 10 to 12 servings

Ingredients

  • 2 1/2 cups raw cashews
  • 3 cups water
  • 1 cup cashew, oat, or coconut milk
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 teaspoons freshly grated nutmeg, plus more for garnish
  • 1/4 cup maple syrup
  • 1 1/4 cup bourbon (optional)

Directions

  1. In a large covered container, combine the cashews and water. Set aside to soak overnight.
  2. Transfer the cashews and soaking liquid to a blender and add coconut milk, cloves, cinnamon, nutmeg, and syrup. Blend until very smooth. Strain the mixture through a fine mesh sieve, if you like (you may choose to skip this step if you have a very powerful blender) and transfer to a pitcher. Stir in the bourbon, if using. Serve in glasses, sprinkled with grated nutmeg.
