Makes 8 servings
This is a classic berry parfait, but you can use this granola or technique for virtually endless variations. Use any leftover granola to sprinkle over ice cream or keep it in a jar for an easy mid-day snack.
Ingredients
Granola
- 1 1/2 cups rolled oats
- 1/4 cup canola oil
- 1/4 cup brown sugar
- 1/4 cup honey
- 2 teaspoons cinnamon
- 1/2 cup sunflower seeds
- 1/2 cup sweetened shredded coconut
- 1/4 cup wheat germ
- 1/4 cup sesame seeds
- 1/4 cup chopped almonds
- 1/4 cup chopped walnuts
- 1/2 cup raisins
- 1 1/4 cups blueberries
- 1 1/4 cups raspberries
- 1 1/4 cups quartered or sliced strawberries
- 4 cups plain yogurt
Directions
- For the granola, preheat the oven to 300°F.
- Combine the oats, oil, sugar, honey, and cinnamon. Spread the mixture into an even layer on a cookie sheet and bake until fragrant and lightly toasted, stirring occasionally, about 20 minutes.
- Add the sunflower seeds, coconut, wheat germ, sesame seeds, almonds, and walnuts to the mixture in the pan. Stir together and spread into an even layer on the pan and bake until golden brown, about 15 minutes. Add the raisins and cool completely.
- To assemble the parfaits, combine the berries in a bowl and toss together. Have ready eight 10 to 12 fluid ounce glasses.
- Add a layer of the berries to each glass, then some yogurt, followed by a layer of granola. Add another layer of berries followed by a layer of granola and then yogurt. Top the parfait with berries.
- Serve at once or keep refrigerated for up to 4 hours.
