Spiced Roasted Almonds

Makes 2 cups

These are the perfect recipe to make in bulk at the beginning of the week for a good mid-afternoon desk snack. The spices are really more of a suggestion, so experiment with what you like best. Add chipotle chile powder for a smoky kick, or garam masala for an Indian-inspired flavor.

Ingredients

  • 2 cups whole raw almonds
  • 1 tablespoon vegetable oil, melted
  • 1 1/2 teaspoons curry powder
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Cayenne, to taste
  • Kosher salt, to taste

Directions

  1. Preheat the oven to 350°F.

  3. Combine the curry powder, garlic powder, onion powder, cayenne, and salt. Toss the nuts in the spices until evenly coated.
