Waldorf Caesar Salad

Makes about 2 cups

Room-temperature citrus is easier to squeeze. Warm for 10 seconds in the microwave if needed to bring the fruit to room temperature. Before squeezing, roll the fruit on a hard surface while applying pressure to break the membranes holding the juice. This vinaigrette can be prepared 1 week in advance. Store in the refrigerator. Shake to emulsify before using.

Ingredients

  • 1 cup grapeseed oil or mild extra-virgin olive oil
  • 1/2 cup lime juice
  • 3 tablespoons honey
  • 1 tablespoon coarsely ground black pepper, plus as needed to adjust seasoning
  • 1 1/2 teaspoons kosher salt, plus as needed to adjust seasoning

Directions

  1. In quart-size container with a lid, combine all the ingredients. Shake vigorously to emulsify. Taste and adjust seasoning.
