Balsamic vinegar and ginger refresher in a glass

Makes 4 servings

Ingredients

  • 1 cup Balsamic Vinegar of Modena PGI
  • 1 cup sugar
  • 1 (1-inch) piece fresh ginger, peeled and sliced
  • 4 cups sparkling water
  • 4 sprigs fresh thyme

Directions

  1. In a saucepan, combine the vinegar and sugar. Cook over moderate heat, stirring occasionally, until the sugar dissolves. Add the ginger and remove from the heat. Cover and set aside to steep for 10 minutes. Strain. Refrigerate the syrup until needed.
  2. To serve the refresher, combine about 1/4 of the syrup with 1 cup sparkling water in a glass over ice. Garnish with the thyme before serving.
