Ingredients
- 1 medium red bell pepper, peeled, seeded, and thinly sliced
- 3 very ripe pears, peeled, seeded, and diced
- 1/4 cup Muscovado sugar
- 1 1/2 teaspoons paprika
- 1/2 teaspoon ground coriander
- 2 teaspoons honey
- 3/4 teaspoon chile powder
- 1/4 cup Balsamic Vinegar of Modena PGI*
- 3 oz mustard oil
- 1 1/2 tablespoon Pommery mustard
- 1/2 teaspoon kosher salt
- 1 tablespoon ground black pepper
Directions
- In a large bowl, combine the bell pepper, pears, sugar, paprika, coriander, honey, and chile powder. Cover and set aside overnight.
- Transfer the pear mixture to a saucepan, and add the Balsamic Vinegar of Modena PGI and mustard oil. Cook until the mixture is sticky and bubbly. Strain through a fine mesh strainer.
- Add the pommery mustard, salt, and pepper, and return to the heat. Cook over medium heat until the sugars caramelize and brown slightly.
- Serve as an accompaniment to a cheese platter or as a sandwich spread.

The European Union (EU) will only give a product PGI status if they decide it has a reputation, characteristics, or qualities that are a result of the area you want to associate with. It is the PGI logo that guarantees the consumer about the authenticity of the product they are buying.
