Fave Bean Puree

Makes 3 cups

Serve this purée as a dip, alongside spring veggies, crusty bread, or toasted pitas, or as a sauce for grilled fish or roasted chicken.

Ingredients

  • 2 lb fresh fava beans
  • 1 cup olive oil
  • Juice of 1 lemon
  • Salt, to taste
  • Freshly ground black pepper, to taste

Directions

  1. Remove the fava beans from their pods, and remove the membrane surrounding each bean.
  2. After you have squeezed all the favas out of their skins, place them in a blender. Add the olive oil and blend on high until very smooth. Season with lemon juice, salt, and pepper.
  3. Serve with fresh pita as a dip, or serve as a side vegetable with dinner.
