Shelling Fava Beans

Makes 5 small-bite servings

Ingredients

  • 2 lb fresh fava beans
  • 1/4 cup extra-virgin olive oil
  • 3 shallots, thinly sliced
  • Finely grated zest and juice of 1 lemon
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon shredded or chopped mint leaves

Directions

  1. In a medium sauté pan, heat the olive oil over medium heat. Add the shallots and cook until tender and aromatic, 1 to 2 minutes. Add the favas and lemon zest, remove the pan from the heat, add the lemon juice, and season with salt and pepper. Fold in the mint and let the mixture sit for a few minutes to allow the flavors to combine. Serve immediately or refrigerate until ready to serve.

    This was a direction given on a website. What does “page 35” refer to?
