Mango and Tuna Ceviche

It's a scorcher out there! And when the weather is extra warm, our favorite dinners can start to seem awfully...hot (looking at you, spaghetti). To beat the heat, we're rounded up some of our favorite recipes to enjoy under a strong fan. There may be some quick cooking involved, but nothing you can't get out of the way early (or substitute for something already cooked!).

Temaki (Hand Rolls)

Don't be intimidated by homemade sushi, especially these impossible-to-mess-up hand rolls. With just some sushi-grade raw fish, sliced chilled veggies, and chewy rice, you've got a build-your-own dinner that won't make you break a sweat. For extra help, stop by your local sushi or poke restaurant for some prepared rice to-go.

Yellow Tomato Gazpacho

This classic summer recipe can be made with any tomato you have on hand. For a refreshing but filling dinner, serve it alongside some crusty bread and cold butter.

Mango and Tuna Ceviche

No heat required for this tropical ceviche, loaded with crisp and cool cucumber and mango. Serve it alongside tortilla chips or some tostones, or use it to top a green salad.

Good and good for you, this salad is energizing and satisfying after a long day in the sun. If you want to avoid cooking the tofu, you can substitute it with any prepared protein, like rotisserie chicken, cooked shrimp, or shelled edamame.
